🥚 Use-What-Ya-Got Egg Bites (Keto-Friendly + Freezer Friendly!)

Y’all know I’m not a “follow the recipe perfectly” kind of girl. I’m more of a “what’s in the fridge and how fast can I get this done?” kind of cook. 😅
So if you’re looking for a quick, protein-packed, keto-friendly breakfast—or just something to clean out those leftovers—these egg bites are it.

🛒 What You’ll Need (Base Recipe):
- 8 eggs
- 1 cup cottage cheese (Good Culture, organic is my fav! Don’t be scared if you don’t love cottage cheese, I promise you won’t taste it!)
- 1 cup shredded Colby Jack (or cheddar, or mozzarella, or… whatever’s hanging out in your fridge)- want it cheesier- add more
- Sprinkle of pink Himalayan salt
- Cracked black pepper (optional)
- Butter or coconut oil to grease your muffin pan
🥓 Optional Add-Ins:
This is where the fun happens. I just use what I’ve got:
- Leftover bacon, sausage, or even ground beef (always pre-cooked)
- Chopped onions, peppers, broccoli, or spinach
- A little hot sauce if you're feeling spicy
- Fresh herbs if you’re fancy or shallots & avocado chunks on top after cooking 🌿
✅ Tip: Always cook your protein and most veggies ahead of time so they don’t water down your egg bites. This is where the "left over" part comes in- use what you have!
👩🍳 How to Make Them:
- Preheat oven to 325℉.
- In a mixing bowl, whisk your eggs.
- Stir in cottage cheese, shredded cheese, seasonings, and all your extra goodies.
- Grease a 12-cup muffin pan with butter or coconut oil.
- Pour the egg mixture evenly into each cup.
- Place a small pan of water on the bottom oven rack (this helps keep the texture fluffy).
- Bake the egg bites on the top rack for 23–25 minutes, or until a toothpick comes out clean.
- Let them cool slightly, then pop them out and enjoy!
❄️ How to Store:
- Keep extras in the fridge for 4–5 days.
- Or freeze in a sealed container—just thaw and reheat in microwave if you can't eat them cold!
